Our Brazil Cerrado is officially classified as a Specialty Coffee, scoring 81 points on the SCA scale. According to the Specialty Coffee Association, coffees rated 80+ are evaluated through rigorous sensory standards that ensure exceptional quality, clean cup, balance, and aromatic precision. This Cerrado profile stands out for its citric acidity, notes of dark cocoa, and dried fruit sweetness, offering a refined cup with remarkable clarity.

Grown in the Cerrado Mineiro region at 800–1.300 meters above sea level, this coffee benefits from an ideal microclimate for slow cherry maturation. The beans are 100% Arabica, naturally lower in caffeine and richer in aromatic compounds. The high altitude allows the cherries to ripen gradually, developing sweetness, acidity, and superior complexity — essential traits of true specialty coffee.

Our Cerrado is processed using the Natural (Dry) Method, the traditional Brazilian approach where whole cherries are dried under the sun before being depulped. By drying the entire fruit, the bean absorbs sugars and fruity notes from the pulp, resulting in a cup with greater sweetness, rounder body, and a pleasant citric touch. The process enhances the coffee’s natural cocoa and dried fruit characteristics while preserving a clean finish.

After harvesting, the ripe coffee cherries undergo fresh pulping, the phase in which the outer skin and fruit flesh are removed to reveal the raw green bean. This moment is crucial in specialty coffee processing: a clean, precise pulping preserves the integrity of the seed, prevents defects, and enhances the clarity of flavor. The freshly pulped bean — still moist, pale, and aromatic — represents the pure essence of the fruit, capturing the Cerrado’s natural sweetness before drying and roasting bring its profile to life.
